Celebration with burgers

I’ve lived 1/4 of my life in the US so celebrating 4th of July even though we now live in Sweden is important to me. I have so many dear memories from my almost 10 years in Colorado. We moved back to Sweden by choice but some days I miss our life in beautiful CO so much… and right now I can’t wait until February of next year when we will visit the US again, I’m so looking forward to see the Rocky Mountains! 🏔😍

In Sweden we celebrate the day with burgers. When 4th of July happens on a weekday we celebrate during the weekend instead so yesterday we gathered family and friends for an afternoon of BBQ.

Culinary highlights

I’m still on medical leave due to my fatigue. I’ve not worked for 7 weeks now and I will continue to be on medical leave for at least 3 more weeks. I was told by my doctor this week that as long as I have difficulties with my concentration and memory I’m not allowed to go back to work. So, I have to find other fun things to occupy my time with… one of them is food! Preferably food without dairy/lactose and grain but on some occasions I do allow myself to eat even those ingredients. If you follow my Instagram you know that I post a lot of images of different food creations, both things I make on my own but also meals that my hubby and I plan and prepare together. Those are actually my favourite moments… cooking together and enjoying a good meal is priceless.

The past weeks we’ve prepared lots of yummy food and as I don’t have anything else fun to write about right now I thought I would share some images of our fantastic dinners. 🙂

Back in business

After almost four weeks being sick I’ve finally had an enjoyable weekend! Not only was it sunny and quite comfortable to be outside most of the time but I’ve also been able to be up and do things. Both yesterday and today I’ve taken a short walk, plus that we’ve managed to fix a few things around the house… Here are (parts of) our weekend in pictures:

I’ve also managed to do a little Spring/Easter decoration both outside and inside.

And last, but certainly not least we’ve enjoyed BBQ in the sunshine. Today we ate sausage with buns.

Tomorrow I’m going back to work again. Finally!! I’m pretty sure the first few days will be a little rough but I’m so happy to finally be doing something useful again.

Dinner x 3

We’ve had a quite relaxing weekend even though we’ve spent several hours doing some last finish touch-up painting job before selling our apartment. Actually, to be more exact, my hubby has done most of the work as I’m still having issues with my hip after the cortisone shot a few days ago.

Yesterday we had a nice evening with my brother.  We BBQ’d and watched the finale of the Swedish selection to the Eurovision Song Contest. Love the song which won!! 🙂 Sanna Nielsen with the song Undo! For dinner my hubby grilled a char stuffed with lemon and dill. I made a roe sauce and we also grilled potato. As my brother don’t eat fish he enjoyed a steak. I’m sure we had a far better dining experience! 😉 The char was so big that we’ve now enjoyed it for three different meals… dinner, breakfast and lunch!

Nerd grill

For two years our old Apple Mac Pro has been standing unused in our home office. Or maybe not totally unused… before we bought our nice chairs I actually used it as a chair. Yes you read it right, a chair! 🙂

As we couldn’t get it up and working we figured a special retirement of the once so useful and powerful computer was in order. Hubby had read online about people transforming their old Mac Pros to grills so he wanted to try to do the same.

First thing he had to do was to remove all the content so only the aluminum cover was left. Turned out to be quite a tedious job as it was put together very cleverly. Hidden screws and other things had my hubby and father working for almost 3 hours  (minus a little break for coffee and cake) disassembling the computer.

Eventually everything inside the computer was laying on the floor. It’s quite amazing to think that someone made all this different parts fit together so perfectly inside a “small” box.

We didn’t have any charcoal nor a suitable cooking grid that day but two days later it was finally time to try out our new nerd grill as we’ve nicknamed the newest member of our BBQ family.

The grill worked out great! Now we only need to find a better stand for it and we’ll be rocking our Apple Mac Pro BBQ for a long time!
