We fell in love with sweet potato yesterday! It's not the first time we've eaten it as it's a very popular ingredient in the US especially for Thanksgiving. When we ate it there though it didn't taste as good as it did yesterday which obviously must be because of preparation, in the US it was common to have sweet potato casserole.
As we had leftovers of the mint sauce we decided to get more sweet potato when we went in to town earlier today. We bought 6 pieces and after today's dinner we got 4 left! Tonight we didn't eat lamb but pork tenderloin and it tasted very well with the sweet potato and the mint sauce.
The magazine I found the lamb and sweet potato dish in had a small section of sweet potato recipes so next weekend we'll try another one, baked sweet potato. Stay tuned for picture(s)!
